Mostly Plants: Lemon Olive Oil Dressing







I've decided to add a new series to the site, where I'll share simple, and in my opinion, healthy recipes. I have been a vegetarian for about 15 years, however, I don't believe that you need to adopt a vegetarian diet to be healthy. I think that Michael Pollan's "In Defense of Food" is a balanced and healthy, yet progressive, approach to nutrition. For those are looking to add new options to their repertoire, please feel free to try these out.

Mesclun Greens with Simple Lemon/Olive Oil Dressing

Ingredients: 1 tbsp- Extra virgin olive oil, 2 tbsp- fresh squeezed lemon juice, 1 tbsp- flaxseed, salt, pepper

-Add mesclun greens to a mixing large bowl.
-Pour extra virgin olive oil and lemon juice on the greens.
- Add a little salt and pepper (to your taste).
- Toss the greens in dressing until all greens are coated.
-Allow to sit (about 3-5 minutes) to absorb flavor.
- Add your salad to a serving bowl and sprinkle flax seeds on top (provides a nutty flavor and adds heart-healthy omega-3 fatty acids.)
